“The Seasonal Kitchen: Cooking with the Bounty of the Region” is a year long series of cooking classes intended to teach people how to slow down and cook delicious, nutritious, locally grown seasonal food.
In an attempt to reconnect people with the food and traditions of the past, each month’s theme will reflect the cultural practice of referring to the cycles of the moon based on seasonal offerings.
MOON OF MAKING FAT – GHEE, AVOCADO MOUSSE, & LARD
Lets fall in love with fats. Healthy fats play a vital role in healthy bodies, by learning how to use them in our daily lives and the reason our bodies and brains crave them, we can free ourselves from the myth of the non fat nonsense. During this class we will learn to make ghee (a clarified butter), homemade mayo, avocado mousse, and a flakey beautiful dessert made with lard. When it comes to fats, the ideas are endless and ultimately luscious.
Instructor: Dani Lundquist believes food is meant to be harvested with gratitude, prepared with love and shared with the ones you most admire. It is her mission to inspire her community to get back into the kitchen using sustainable cooking methods for the health of themselves as well as the planet. As a certified essential cuisine coach, a yoga instructor and a master fermenter she truly sees the beauty of all beings and their own personal needs. Her philosophy is to eat right for you, as long as it comes from the Earth. Eating truly is as simple as that.
