The Seasonal Kitchen – December

“The Seasonal Kitchen: Cooking with the Bounty of the Region” is a year long series of cooking classes intended to teach people how to slow down and cook delicious, nutritious, locally grown seasonal food.
In an attempt to reconnect people with the food and traditions of the past, each month’s theme will reflect the cultural practice of referring to the cycles of the moon based on seasonal offerings.
I’ll share recipes for delicious baked goods that make excellent use of regional grains & fruits and are equally suitable for packaging as holiday gifts, enjoying on cozy winter evenings or being dressed up for festive desserts.

*buttermilk cake (as a bundt cake, fruit crumb cake, and simple layer cake)
Instructor: Mika Maloney is the baker & owner at BATCH bakeshop, a tiny bakery located in Spokane, Washington focused on creating delicious, small-batch, high-quality baked goods and desserts. Mika has lived in Spokane since 2007 and started BATCH bakeshop in 2011, first selling at the farmer’s markets & to local coffee shops before expanding into a complete kitchen & storefront space in Spokane’s West Central neighborhood in 2014. Cakes, muffins, and other treats are baked with many seasonal and local ingredients, from apples and berries to lavender and rosemary. Real food only: real butter, Northwest flour, nothing artificial. She is continually inspired by the supportive and exciting food community in the Inland Northwest and the many amazing folks here operating their tiny businesses with love and passion.
