Seasonal Kitchen – Naked Chocolate

This class is introducing chocolate in its most authentic, raw state ranging of the different forms of chocolate and the taste variability, utilizing cacao in the kitchen for sweet and savory dishes and the ethical and environmental implications cacao has from a global perspective. We’ll be making truffles, flourless chocolate cake and pork tenderloin with cacao spice rub – sweet and savory!
Instructor: Karmen Gregg graduated from the University of Idaho in Moscow, Idaho with a BS in Human Nutrition and Sociology and is currently pursuing her Master’s degree in Integrative and Functional Nutrition from Saybrook University. She is energetic and passionate about food, health and overall well-being and loves taking and applying her knowledge to empower others to make positive changes in their health. In her spare time, you can find her cooking, hiking or enjoying Mother Nature in her kayak on beautiful Lake Coeur d’Alene.
