Seasonal Kitchen – Cheesemaking

This class in cheesemaking will cover recipes and techniques for beginner-friendly goat cheeses: chèvre, feta, and dry-curd cottage cheese. We will take three-and-a-half gallons of milk through the processes of curdling and pressing, including the use of an inexpensive cheese press to make your own aged cheeses at home. Tips on sanitation and livestock care and management for home dairying will be also be discussed.
Instructor: Chrys Ostrander is the caretaker at Heartsong (25 miles north of Spokane, WA), where he raises dairy goats, maintains an 8,000 square-foot garden, and hosts educational events on permaculture. Chrys has been a resident of Washington since 1990 and remains active in sustainable agriculture circles. In 2012 he earned a Permaculture Design Certificate from Michael Pilarski. Chrys enjoys teaching organic gardening, cheesemaking, goat husbandry, and permaculture.
