Seasonal Kitchen: Cheesemaking

Come learn how to make Fromage Blanc and Compound Butter from one of our region’s most acclaimed cheesemakers! You’ll learn about the types of milk and creams and how they affect the final product, as well as the role of cultures in cheesemaking. In addition, learn about how to add herbs and flowers to dazzle your friends and family. Everyone will get to take a bit of butter and cheese home!
Instructor: Katie Austin has owned and operated Kelly Creek Farm, located in Pinehurst, ID for 12 years. She has a licensed raw milk creamery where she makes artisan farmstead cheeses from her milking herd of Jersey & Dutch Belted cows. All of her cows are grass-fed, rationally grazed and fed certified organic supplements. She is committed to providing people with high quality, humanely-raised, nutritious food.
