Seasonal Kitchen: Beautiful Beans

Beans are one of the longest cultivated plants known to history, prevalent in both Old and New World History and still today. Their existence has persisted throughout history for good reason, not only are they high in protein but also are packed with antioxidants, potassium and fiber. We will be transforming the bean beyond your usual perceptions. We will make an appetizer (White Bean Artichoke dip (vegan version of spinach artichoke dip), a main dish (the Contender – veggie burger with beans, grains and vegetables) and even a dessert all starring the almighty bean (Dark Chocolate Black Bean Fudge Brownies)!
Instructor: Raquel Kaelin has seen first hand the impact of food, both good and bad, on her own health and on those she has cared for. As a way to help others mitigate suffering and share her passion of nutrition and culinary education with the community, she created Tender Loving Cuisine. She has taught vegan cooking classes all over the Inland Northwest, bringing awareness to the importance of preparing whole foods with love. Raquel teaches plant-based recipes that emulate the satisfaction and delight of home-cooked comfort meals. She believes in having a connection with our food from seed to table and is excited for the opportunity to connect with others who are interested in this concept. When not in the kitchen or instructing, Raquel can be found seeking adventure, spending as much time as possible outdoors reveling in nature.
